Marinating Chicken: What came first, the chicken or the egg? We should probably stop asking that question and find ways to enjoy them both. Together. Now, I by no means came up with this concept on my own. The idea here though is to try it and find a way to make it your own. The recipe was filmed on my tiktok and that may be why you have found this article. There is no question that this chicken was some of the best I have ever made. A friend sent me this recipe idea and once I tried it for myself, I decided this was too good to keep to myself.

The recipe is so simple you won’t even believe it. I was skeptical too but the results were to die for.

●     ½ cup neutral oil

●     1 egg

●     1 cup apple cider vinegar

●     2 tbsp sea or kosher salt

●     1 ½  tsp poultry seasoning

●     ½ tsp white pepper

●     15 bones in skin on chicken thighs

The ingredients are fairly simple and probably hang out in your refrigerator and pantry. The key thing about this recipe is that you must give it time. Place all ingredients in a bowl or bag and mix well. Then place your chicken in the mixture for at least 24 hours, 48 hours for max flavor.

The egg’s place in the recipe is two-fold. One, to combine the oil and vinegar to prevent them from separating. The other role is to help your chicken crisp up for an amazing finish. This was cooked on the Weber Summit Kamado at 350-375 degrees Fahrenheit for 30 minutes skin up, then 15 minutes skin down to crisp. This should yield some crispy, juicy smoked chicken that rocks the party or the dinner table. If you watch the TikTok video, you will hear the unimaginable crisp on that skin.

How Can I Make It My Own?

For sure, take this recipe and make it your own. I am very interested to hear from you whether you tried it or not. So to alter this recipe, some things must stay the same. Oil, vinegar, egg and salt must remain. With regards to the poultry seasoning, I think any high flavor rub that you can make or buy will suffice in this recipe. The white pepper can be increased or replaced with your favorite pepper whether flakes or ground. Also, the chicken can be replaced but dark meat is the best I’ve found. Although, I am not saying don’t try breasts. You can cook in an oven, air-fryer or grill around the same temps and get similar results. Smoking was my method of choice.
