Grilled Peach Cobbler
- 6 ripened peaches (Peeled and quartered)
- 1 cup brown sugar
- 8 tbsp butter or shortening
Batter
- 1 cup flour
- 1 cup sugar
- 2 tsp baking powder
- ¼ tsp salt
- 1 can of evaporated milk
Directions
Over hot coals, grill up Peeled and quartered peaches. Just grill marks and light charring. Slice peaches and put in cast iron pan over the fire with brown sugar. Cook over high heat until peaches are slightly soft and the sugar makes a rich syrup. Mix all batter ingredients together in a separate bowl. In a 12 inch cast iron skillet, melt butter. Remove from smoker and pour batter into the hot skillet. Use a spoon or spatula to spread the Batter around. Spoon peaches and syrup into the batter as evenly as possible. Top with ground cinnamon. Cook in smoker around 350-375 degrees for 40 minutes. Remove from smoker and serve warm. Topped with whipped cream or vanilla ice cream.
